Chocolate & Hazelnut Cookies

This recipe always goes down a treat. If you’re looking to make friends, make a batch or two of these and you have a great ice breaker, and a great treat. I’ve made these cookies for my class at university and not only did my fellow classmates love them, but so did the lecturers. I’ve also taken them to social church occasions and broken them out at family get togethers. They’re relatively easy to make, I’ve indicated a shortcut I’ve taken here, which I’ve been told makes no real difference but some of the cookies will look a little anaemic. It’s fine, they still taste great. If you have time or just want to do them properly, mix the melted chocolate inĀ with the flour and nuts, not after. However, I find the chocolate isn’t melted enough and mix the dry ingredients together first, mainly because I’m impatient.

This recipe comes from the wonderful Nigel Slater. This was the first recipe I found of his, and it’s still my favourite. A true culinary great, keep your eyes here for more of his recipes.

I made these last Thursday night and it’s now Wednesday lunchtime and I’m tucking into the last cookie (and the only one I’ve had). It is a little stale, but perfectly edible. They’re perfect about fifteen minutes out of the oven sprinkled with a little icing sugar (and I mean a little… the first time I made them they were coated in sugar and were a little too much!)
